Recipe - Beetroot Salad

The humble beetroot is often looked over by many, but it has many health benefits and when combined with the right ingredients has an incredible flavour you have to taste to believe! This is ideal as a snack or light lunch.

Serves: 4

Prep Time: Approximately 10-15 minutes


Ingredients:

50g Mayonnaise

50g Greek Yogurt

1tsp creamed horseradish

Zest and Juice of 1/2 Lemon

Finely Chopped Bunch of Chives

350g cooked beetroot, diced into approximate 1cm pieces

1 granny smith apple, diced into approximate 1cm pieces

Peter's Yard Medium Sourdough Crisp Bread with a hole


Instructions:

1. In a large bowl, mix everything except the beetroot and apple, adding salt and pepper to taste.

2. Pour in the beetroot and apple, mixing everything until it has all turned pink.

3. Generously spread onto the crispbreads and Enjoy!
