Recipe - Tomato and Basil Salad
In the summer, you do not always want to be sitting down to a full meal. Sometimes you just want something quick and light. This salad is exactly that and with the pesto dressing, it really packs a tasty punch! Perfect for a lunchtime snack, light evening meal or even as a side at a barbecue.
Serves: 3-4
Prep Time: Approximately 10mins
Ingredients:
300g washed and chopped Salad Tomatoes, with seeds removed
2 handfuls of fresh Basil Leaves
1 finely diced small Red Onion
and for the dressing:
1tbsp Mr Organic Basil Pesto
Juice from 1/2 a Lemon
1 tbsp Olive Oil
1/4 tsp pepper
1tbsp Apple Cider Vinegar
Sea Salt
Instructions:
1. Gently mix your tomatoes, red onion and basil in a large salad bowl.
2. In a mixing jug add your pesto, lemon juice, olive oil, pepper and apple cider vinegar and mix until fully combined. Add sea salt to taste.
3. Drizzle the dressing over your salad and enjoy!
This salad can also be prepped and kept overnight in the fridge
